IG recovery - account has no phone number, uses "@example.com" email address

Hail Mary time -- hope someone here can help...
I am trying to recover an Instagram account managed by a former employee who did not share login credentials after she left. By looking at the IG info on the FB page the brand is connected to, I can see the IG account does not have a phone number associated with it, and the email says *brand*@example.com. (Settings --> Instagram --> Instagram Account Details / Private Information)
We're completely stuck at this point.
- All login attempts -- both mobile and desktop result in a 'suspicious login attempt' warning.
- We cannot get the former employees laptop back to try and attempt logging in with a cookied browser.
- No luck logging in via multiple IP addresses -- in the office, VPN, etc.
- I have even contacted the admins at example.com, and while courteous, they were unable to help as there is no mail server set up for that domain.
- help.instagram.com is anything but helpful.
I've been managing social media accounts in one way or another for over 12 years at this point and have never run into a brick wall like this before.
Anyone?!?
