Posts of similar styles wildly differ in impression success?

I'm a marketing intern at a startup and have been running the social media. Recently I have noticed a few posts, maybe 1 or 2 per week over the last couple weeks getting between 400 - 500 impressions on Instagram where as the usual is 120 - 160. Typically every week I have a theme running, usually a spark template with differing content each day (one post per day) and they are very similar.
Why do the results differ so much and how can I isolate the successful properties?
