What’s in your portfolio?

So I’ve been a social media manager for a company for 5 years and done a pretty good job or building up the brand and their social media presence.
But most of that comes from day-to-day community building, and while have had some million+ reach posts and campaigns most of the success is just from being not an obnoxious asshole on the internet.
But now I’m applying for a new job and they’ve asked me to bring a portfolio. And I’m not sure what to put in it? Do I just include the creatives for the posts that went viral, or descriptions of successful campaigns? That seems like it isn’t actually getting at any of the point of what makes social media successful as a marketing tool.
So I would really appreciate any advice or examples on what other folks have done.
