Attempting to start some affiliate marketing using Youtube and Social Media

So I'm not entriely sure whether this is the correct location to be asking this question but here goes.
So I created a YT channel a few weeks back in regards to beer. I have a small following to start with and have about a dozen videos. On each video I point to some products directly on Amazon. I did manage to actually make a few sales.
My Twitter account is young , my Instagram account is the one that has really taken off but as far as I know, I can't really point to amazon from there.
Anyhow, here's my actual question.
I noticed on my Amazon Associates page that on certain days I can get 200-300 clicks and others 40-50. So I'd like to figure out which are the items that were linked to that were causing those spikes but there seems to be no way to track clicks without sales. I seem to be receiving conflicting information on how to go about managing all this. I want to know whats doing better, my Twitter or YouTube links.
I made various trackingIDs in amazon so i could track which were from say YT, my website twitter, etc. I then found out i could use bit.ly to track all clicks and should instead point to my site, and then to amazon from there but then I'm back to not knowing which clicks actually lead to sales.
I'm confused as to what the proper, step by step method might be in order to send out my links, track which are doing better and start doing some real sales.
I also am currently using the free wordpress.com and don't have any automated tools for tweeting because I don't want to invest to heavily in this just yet without understanding which are the best tools to start with.
Any pointers would be appreciated. I have been following Sean Cannell, D Eaves, etc. for a while but they pretty much always just say the same thing, provide useful content, etc. What I'm looking for is more a of blueprint as to which steps to take and which order. I have patience, I just don;t want to work down the wrong path.
