What is best practice when one wants to optimize a performing ad set in FB Ads?

Hello Community,
A quick question for you all, regarding FB Ads "tinkering" techniques if you can help?
Example:
Let's say I have successfully run an ad in ad set with a broad lookalike audience for the past two weeks on all people aged 18-65+. I have garnered reach, clicks, ATCs etc etc. I look at view charts in the ad set and see that predominant activity comes from females aged 18-44. I now wish to narrow my demographics and tinker with the LLA to target this, now more specific gender/age group.
What is best practice?
Option 1: Go into the ad set in question, tinker with the demographics, click publish, and continue to track performance of this ad set over time?
Option 2: Duplicate the ad set, tinker with the demographics in this "new" ad set, publish this "new" ad set, then immediately pause the "old" ad set, and then begin tracking only this fresh "new" ad set/ad?
Option 3: (any other strategies to employ?)
