Post-grad needing ideas to expand portfolio

I recently just graduated and I am looking into social media and digital marketing jobs. I have minor graphic design experience but I am needing more to add to my portfolio.
I am doing online certifications from Twitter, google, Hootsuite etc... but I would like to add some actual work of my own.
Hiring managers/ experienced professionals, what are projects you desire in entry-level job seekers in their portfolio?
