Tips for running social media for a small nonprofit?

I have landed a summer job working for a small nonprofit that supports special needs children through summer camps and workshops for parents, among other things. It was not an 'official' application but more from asking for a favor because we have a family friend who is pretty high up in the organisation, but he said I would pretty much have free reign over the social media aspect as they don't really have a dedicated social media person. Problem is, I don't really know what I'm doing. I will be finishing a bachelor's in psychology in about a month, and will be starting a master's in marketing and consumer psychology in September so I wanted an internship/entry level job this summer to learn the ropes before starting the master's. But now since I've been given "free reign" I feel out of my depth and don't want to show up on the first day and have absolutely no plan.
I have had a basic scroll through all their social media channels and even from my untrained eye I think they need some work. I have had some ideas on social media posting during the summer camp itself such as Instagram stories/live (which they have never done before) and longer (3-5 min) YouTube videos explaining different aspects of the organisation. I've watched videos and read articles to start learning the basics of running social media for a company, but I guess what I'm asking for here is advice on where to start when I actually get to the office? They are on Facebook, Twitter, Instagram, YouTube, and LinkedIn but the problem is none of those channels post frequently, and if one thing is posted on one social media channel, the same thing gets copied to every other channel. I read that consistency is one of the most important things when trying to grow followers, but surely nobody wants to read the exact same post on 5 different apps?
Honestly, any other advice would be really appreciated as I do not want to mess up. I have already proposed the Instagram stories/live and YouTube videos and these ideas were met with enthusiasm so they are prepared to listen to me but I don't want to run out of ideas too quickly or be too ambitious and start doing something I can't actually finish.
