Instagram ads; when to start and best method?

I'm debating using Instagram ads, which is something I did in the past and it didn't work mostly because I wasn't really sure what to do.
As you all know it lets you customize the age range, locations, 'interests' and spending range. What should I be using for these, the same demographics that are already what my Instagram sees most?
On top of that, how often would you suggest using ads and what's the minimum amount of followers you'd suggest before anybody even thinks about using ads? And what days of the week would one think the ads would be most interacted with?
