Facebook Ads: How do interests work?

I'm having some trouble figuring out how some more niche interests work on Facebook ads. When I select something like "Tennis", it's clear I'm going to target people that are interested in Tennis.
However there's a lot of smaller interests such as "Christmas Gifts" that are not quite as clear. Are the people in these audiences people that have been looking for Christmas gifts or are they people who like pages that are all about Christmas Gifts?
If I'm trying to target people that are looking for gifts am I better off assuming that someone is looking for gifts and build my audience like that? Something like: In a relationship + disposable income?
