Interviewing for Social Media Specialist... How do I SMM?

tl;dr: I have an interview with a school district where I have to present my previously successful social media campaigns, but I have none. What are my alternatives?
I am trying to find a job near my Fiancé so that we can be together (currently doing long distance). I have been applying for Web Dev jobs for a couple weeks now and when I saw this position (Website/Social Media Specialist) , I figured why not (I fit most of the job requirements/prerequisites, aside the social media part) !
Ok, the job I applied for, according to their description, is partially managing their website. I have experience creating, selling, and repairing websites. Everything from building them from scratch using HTML, CSS, JavaScript, JS Frameworks, etc., all the way to using established platforms like WordPress, Joomla, Shopify, etc.
The other half of the job is managing their Social Media presence. This I only dabbled in personally for a few months back in 2010 and I don't have any professional experience. Instead of asking you guys "how do I SMM", I'm going to ask a few questions and hopefully get pointed in the right direction! I can easily google my questions, I know, but I figure it would be best to come here for practical and more importantly, up-to-date advice.
1. I have to present a successful social campaign (that I was involved in executing) in front of some important people during the interview. I have never done this so I do not have anything to show. So, My plan is to present some theoretical knowledge and let them know I am not clueless and get the concepts. Do you all have any updated reading/viewing material for me or any topics I should bring up to wow the interviewers or at least give them a bit of confidence in my ability?
2. Monitoring when the school district (or it’s schools) is mentioned on social platforms. Hootsuite, Brandwatch, Talkwalker are services that can do this task, but which, in you guys opinion, would be best for school district? Or would any of those 3 (or another I didnt mention) be sufficient. Apparently, I would have Facebook, Twitter, LinkedIn, Pinterest, Instagram, Snapchat, Google+ to worry about (according to the job description, but I don’t see many school districts utilize all of these platforms.)
3. Measuring the success of social media campaigns. I know how to measure a campaign's effectiveness when we are talking about PPC Ads and SEO, but I am not at all sure how this would be done with social media. I guess I can break this down into goals of the school district and the metrics related to them. For example, Awareness would be volume, reach, exposure. If my goal is to drive traffic, then tracking URL shares, clicks and conversions would be the thing to do?
This just about sums everything up. I am probably over thinking everything as this is probably just a 40k/yr job and they may just need a warm body. I'm excited because of the 90-100 applications I submitted in the last 4 weeks with no reply, I applied to this one thinking, “oh what the heck”. I got a call back within 24 hours.
